Stonewall, Texas — June 1, 2026 — Acquired Taste Wines, a new multi-brand wine concept founded by industry veteran Dave Bryant, is set to open June 6, 2026 along the 290 Wine Trail in Stonewall, Texas, introducing a new model for how wine is made, experienced, and understood.
At its core, Acquired Taste Wines rejects the idea that a winery needs to be defined by a single label, estate, or tradition. Instead, it operates as a portfolio of distinct wine brands, each built with its own identity, aesthetic, and point of view, giving consumers the freedom to explore wine without the constraints of convention.
“Wine has been stuck talking to the same audience, in the same way, for a long time,” said founder Dave Bryant. “We’re not interested in repeating that. Acquired Taste is about creating something people feel first and understand second.”
Blending high-quality sourcing and production with a design-forward, culture-driven approach, Acquired Taste Wines positions itself closer to a creative studio than a traditional winery. The tasting room experience reflects that shift, moving away from rigid formats and toward something more fluid, immersive, and aligned with how a new generation actually engages with wine.
Bryant’s background across top-tier hospitality and wine programs informs the foundation but Acquired Taste Wines is intentionally built to move beyond it. The project embraces a more modern perspective, where storytelling, design, and accessibility carry as much weight as appellation and pedigree.

Acquired Taste Wines will offer curated tastings, limited releases, and an evolving lineup of brand-driven experiences, with plans to expand into collaborations, exclusive drops, and direct-to-consumer programs.

The Campaign Wines - The Campaign Wines invites drinkers to “vote with their glass.” Built as a dual-coast concept, the brand features Texas wines (red) and California wines (blue), using contrast as a conversation starter rather than a dividing line. The message is simple: different perspectives can still end in the same place, around a table, with a bottle open.
Heart Break Wines - Heart Break Wines doesn’t pretend to be polished. It’s bold, messy, indulgent and exactly what you reach for when you stop trying to have it all figured out. Built around rich blends and immediate drinkability, these are wines made for late nights, bad decisions, and the stories that come after. No patience required. No rules to follow. Just open it and deal with the consequences in the morning.
Temporary Wines (Fall 2026) - Temporary Wines is built on scarcity, collaboration, and the idea that the best things don’t stick around. Every release is a one-time drop, never replicated, never reprinted, pairing limited-production wines with original artwork from artists outside the wine world. The label itself is a temporary tattoo—designed to be peeled off and worn—blurring the line between product, art, and personal expression. The inaugural release features a custom tattoo design by Drew Graves of Werdgra, turning each bottle into both a collectible and a statement. Once it’s gone, it’s gone. No second runs. No archive releases. Just a moment that existed, and then didn’t.
Moments in Time (Fall 2026) - Moments in Time captures the rare intersection of place, time, and feeling and holds onto it just long enough to matter. Launching with a Napa Valley Cabernet Sauvignon, the brand leans into a more classic foundation while reframing it through a modern lens. The aesthetic, inspired by vintage viewfinder reels, reflects the idea that the best moments don’t last, they replay. Structured, layered, and built with intent, Moments in Time offers a more serious expression within the Acquired Taste portfolio, without losing the emotional connection that defines it.

Dave Bryant is the founder of Acquired Taste Wines, an unapologetically creative wine project built to challenge the conventions of the industry. Through a rotating portfolio of distinct brands—each with its own identity, story, and point of view—Acquired Taste Wines blurs the line between product, art, and experience, reimagining how consumers discover, engage with, and ultimately connect to wine. From artist-driven labels to concept-based releases, the platform is designed to create wines that don’t just sit on a shelf, but demand attention and spark conversation.
A Napa Valley native, Bryant built his career across luxury hospitality and premium wineries, including Solage Calistoga, John Anthony Vineyards and Alpha Omega Winery, where a focus on both guest experience and product quality shaped his approach to the business. After relocating to Texas, he founded Texas Wine Consulting, working alongside acclaimed winemaker Jean Hoefliger to help elevate wine quality, refine vineyard and winemaking strategies, and drive measurable growth in direct-to-consumer performance for wineries across the state. That work has contributed to a broader shift in perception around Texas wine—proving that with the right focus on quality, storytelling, and execution, the region can compete on a national stage. Acquired Taste Wines builds on that momentum, serving as Bryant’s primary creative outlet and most ambitious venture to date.
